In the production of shiitake mushrooms, dehydration processing is an important step. The quality of shiitake mushrooms will determine the final quality of shiitake mushrooms. The moisture content of fresh mushrooms is generally about 90%. After heating, the moisture content is reduced to about 13% after ventilation. The quality requirements of dried shiitake mushrooms are rich in meat, normal cover color, neat roundness, volume, pleated milk, and deep fragrance. To achieve these standards, special attention should be paid to the following two points in the process of dehydration and drying:
First, the correct choice of drying temperature
Shiitake mushroom drying temperature is usually 30-60 °C. If the temperature is too low for a long time, the endothermic reaction is slow, the softening time is long, the color of the mushroom is not good, and the color is dark; if the temperature is too high, the quality of the mushroom will be affected because the surface evaporation and the internal diffusion balance are destroyed. Control the heating temperature.
Dry mushrooms, the key to the temperature of the drying room to meet the requirements. Therefore, dehydration must provide enough heat to dehydrate. If the dehydrator is not heated enough, many mushrooms that were originally curled into the drying room will begin to grow, causing parachute formation and reducing the quality of mushrooms.
Second, the drying process pay attention to humidity
During the drying process, the mushroom body begins to remove water from the body after being heated, and evaporation and dehydration take place at the same time. As a result, the surrounding air becomes humid. If the humidity is not promptly removed, mushrooming will occur and the mushroom will turn black. Obvious reduction. Therefore, in the whole process, moisture removal is an important step. According to the water content of mushroom that is 90%, the average drainage is 6%. Since the moisture content in the later period is gradually reduced and the evaporation is slow, the humidity should be accelerated in the initial stage. According to the relevant introduction , With an initial level of 15%, medium-term 10%, and late-stage 8% humidity, good results can be obtained and better quality can be achieved.
